| KARE-KARE (tripe curry in peanut sauce) Ingredients: 1 k Beef tripe 3 medium Eggplants, cut into 1-inch cubes 1 bundle green beans, cut into 1-inch pcs. 1 can Banana flower 1 c Peanut butter 1 medium Onion, sliced 5 cloves Garlic, crushed 2 tbsp Vegetable oil Directions: 1. Boil beef tripe in a pot of water for 1-2 hours ntil tripe is tender. Cut tripe into 2-inch square slices. 2. In a separate sauce pan or wok, saute in vegetable oil, garlic and onion the rest of the vegetables for 10-15 mins. 3. Add in peanut butter and stir for 10 mins. 4. Add in the boiled beef tripe in the vegetable mix. Simmer for 10 minutes. 5. Serve hot with boiled rice. 6. Use shrimp paste or fish sauce to taste as garnish. |
| Adobong Baboy (Pork Adobo) Ingredients: 1 1/2 to 2 pounds of pork shoulder or butt, cut into 1-1/2" cubes 8-10 cloves garlic 1 cup white vinegar 1 cup water 1-1/2 tsp salt 2 bay leaves 1/2 teaspoon ground black pepper Oil Directions: 1.Cut pork into serving pieces. 2. Put pork and all other ingredients except oil into a pot and marinade for at least 1/2 hour. 3. Bring to a boil, then reduce heat and simmer until pork is tender. 4. Remove pork from pan. Boil liquid over high heat until reduced and thickened. Strain into small bowl and spoon fat from top into frying pan. 5. Add oil and fry the pork pieces until brown and crisp. |
